Whipped Potatoes (VIDEO & RECIPE)

One of the most delicious side dishes I have EVER had is Whipped Potatoes. What I love about this dish is how fluffy and full of flavor the potatoes are.

Recipe | Whipped Potatoes

Yield: 2 servings

Ingredients:


Potatoes:

Russet Potatoes, 2 each, quartered

Butter, 1/2 Stick

Milk, reduced fat, 1 cup

Salt, 2 tbsp

Pepper, 1/2 tbsp

Parsley, 1 pinch


Garnishes:

Bacon, 5 each, finely chopped

Scallion, 1 stalk, sliced

Shredded Cheddar, 3 tbsp


Method of Preparation:

1. Set out bacon for about 7-10 minutes and allow them to reach room temperature (This is the trick to having crispy, evenly cooked bacon!)

2. Cut two large russet potatoes into thirds (for smaller potatoes, use 4 and quarter them).

3. Fill a large pot with cold water, add enough salt to the water to ensure water tastes salty and add the potatoes. Place over high heat and cover the pot. Cook for 12-15 min.

4. In a small sauce pot, heat butter and milk over low heat. When butter is fully melted, turn off heat and set aside.

5. In a medium or large saute pan, over medium heat, arrange bacon in the pan and flip them every 2 minutes to ensure even cooking.

6. Cook bacon until crispy and set aside on a paper towel.

7. After bacon fat has been absorbed by the paper towel, finely chop the bacon.

8. Finely slice scallions about 1/4 inch wide and set aside.

9. In a standard mixer or in a large bowl with a hand mixer, place the cooked potatoes.

10. Add the milk and butter mixture to the bowl.

11. Add salt, pepper and parsley to the bowl.

12. On high speed, mix all ingredients until potatoes are fluffy and all ingredients are well incorporated.

13. Taste and adjust seasoning as needed.

14. Serve and garnish with chopped bacon, cheese and scallions.
