Quarantine Breakfast! (VIDEO & RECIPE)

Y'all, if you know me at all, you know I am BIG on breakfast! I love to have a breakfast that is savory, filling and obviously, DELICIOUS! One of my favorite things to make for breakfast is home fries! What is great about the home fries is that they are jam-packed with carbohydrates which gives me tons of energy to jump start my morning. Also, the home-fries were flavorful, crispy and tender. This day, I paired it with some turkey and veggie egg scramble!

The egg scramble has asparagus, turkey, scallion and Swiss - my favorite cheese. I then put some sliced avocado on the side to up my healthy-fat intake. Let's just say, I could not make this without filming it AND providing you all with the recipe.





Recipe | Quarantine Breakfast (Eggs and Potatoes)

Yield: 1 serving

Ingredients:


Home Fries:

Potatoes, russet, 1 large

Onion, yellow, 1/2 diced

Vegetable oil, 2 ounces

Ground red pepper, 1 tsp

Garlic powder, 1 tsp

Basil leaves, dried, 1/2 tsp

Salt, to taste

Pepper, to taste


Eggs:

Turkey, deli, 1 slice

Eggs, 2 large, beaten, seasoned

Asparagus, 2 stalks

Scallions, 1 stalk

Swiss cheese, 2 each

Salt, to taste

Pepper, to taste

Butter, to taste


Method of Preparation:

1. Wash the russet potato, asparagus and scallions well and set aside.

2. Begin dicing your onion into parmentier (1/2" x 1/2" x 1/2" dice).

3. Dice your potato into parmentier (1/2" x 1/2" x 1/2" dice).

4. In a shallow, saute pan, heat enough vegetable oil to coat the bottom of the pan.

5. Add potatoes and begin to shallow fry until crispy. Stir occasionally, ensuring you are not breaking potatoes up.

6. Season potatoes with salt, pepper, ground pepper, garlic powder and basil leaves.

7. While potatoes are cooking, begin to chop asparagus into 1/2 of an inch wide pieces.

8. Slice scallions into 1/4 of an inch wide pieces.

9. Roll up slice of turkey and slice into 1-inch wide pieces.

10. In a nonstick saute pan, add butter and one ounce of oil.

11. Beat eggs and season with salt and pepper.

12. Begin to saute asparagus until tender.

13. Add turkey and scallions and saute until turkey is seared.

14. Pour in eggs and begin to scramble using a silicone spatula.

15. Cook eggs to desired doneness and season.

16. Layer cheese on top, turn off stove, cover and allow heat to be trapped and melt the cheese.

17. Add onions to potatoes and adjust seasoning as needed.

18. Fry until onions are lightly caramelized.

19. Serve eggs with potatoes.

20. Add sliced avocado and enjoy!
