One of my favorite vegetarian, gluten free dishes is Broccoli in Garlic Sauce. As a New Yorker, Chinese food is something I can eat EVERY SINGLE DAY. Although this is completely Americanized Chinese food, it is still an all-time favorite. For friends that enjoy a little more protein, adding some thinly sliced chicken or beef to this is a great idea as well.

I am very much a chef that enjoys BOLD flavors. This is why my favorite foods to cook are usually inspired by Asian or Caribbean cuisine.
This recipe will be sure to take your tastebuds on a ride to flavor paradise. From the umami from the soy and teriyaki to the hint of sweetness from the cane sugar and down to the crunchiness of the perfectly-cooked broccoli, this dish is everything. Oh, and let's not forget that hint of heat from the red pepper flakes! See the recipe below so you can make this at home.
Recipe | Broccoli in Garlic Sauce
Ingredients:
Garlic, 4 cloves, minced
Rice, jasmine, 1 cup
Water, for rice, 1 cup
Broccoli, fresh, 1 crown
Scallions, 1 stalk
Soy Sauce, gluten free, 3 ounces
Teriyaki Sauce, gluten free, 1 ounce
Cornstarch, 1 tbsp
Water, 1 tbsp
Water, for sauce, 3 ounces
Pepper, fresh ground, to taste
Salt, to taste
Red Pepper Flakes, 1 pinch
Cane sugar, 1 tsp
Vegetable oil, 1 ounce
Method of Preparation:
1. On high heat, set up a pot of water with a metal strainer to create a steamer.
2.Wash and trim broccoli into florets and cut florets in half or quarters if needed.
3. Peel, slice and mince garlic. Set aside.
4. In a small sauce pot, rinse jasmine rice until water runs clear.
5. Add water, stir it once, cover and place it over low heat to steam for 8-10 minutes.
6. When water for steamer is boiling, add half the broccoli to the metal strainer and place over boiling water. Cover and steam for two minutes. Repeat for second half of broccoli and set aside.
7. In a large saute pan, over medium heat, add the oil.
8. Toss in the minced garlic and allow it to brown, be careful not to burn it.
9. Add in the soy sauce, teriyaki, cane sugar and water. Bring it to a simmer.
10. In a separate, small, bowl, stir together cornstarch and water. Add mixture to sauce and whisk it. Allow it to simmer and thicken.
11. Add in the broccoli and season with salt, pepper and red pepper flakes. Toss until sauce coats broccoli.
12. Serve and enjoy!
