Pumpkin Pie + Crust Recipe



This homemade pumpkin pie had to be the best one I’ve made thus far. 🙏🏾 Huge shoutout to The Mahogany Room for the candle. The scent truly filled the room. Also, thank you to Chef Joshua Weissman for the inspiration! I did do a few things differently and below is the recipe 👇🏾


Pie Dough Ingredients:

Flour, all purpose, 2 C

Sugar, 1 Tbsp

Butter, unsalted, diced, cold, 2 sticks

1 cup Water, iced, as needed

Salt, 1 tsp


Instructions:

1. Gather all ingredients and equipment needed.

2. In a mixing bowl, combine the dry ingredients.

3. Add in the cold, diced butter and using a pastry cutter, or your fingers, mix the butter into the dry ingredients until consistency is the texture of coarse sand.

4. Slowly, about 1 tablespoon at a time, add in the cold water and begin to mix until the dough forms together.

5. When the dough is fully formed, plastic wrap them tightly.

Refrigerate for 30 min.

Pumpkin Pie Filling Ingredients:

Avocado Oil, as needed

Sugar Pumpkin, 1 ea

Sweetened Condensed Milk, 14oz (1 can)

Eggs, 2 ea

Cinnamon, 2 Tbsp

Nutmeg, 1 Tbsp

Ginger, ground, 1 Tbsp

Salt, 1 pinch


Instructions:

1. Gather all ingredients & equipment needed.

2. Preheat your oven to 425 degrees.

3. Cut off the top of your pumpkin and then cut your pumpkin in half, scoop out the seeds and lightly oil.

4. Set on a roasting rack lined with foil & roast until the skin is soft and easy to peel.

5. In the meantime, roll out pie dough until it is wide enough to cover your pie plate. It should be about 1/2 inch thick and hang over the edge of the pie plate.

6. Gently press down the center, tucking the pie dough into the plate corners.

7. Trim off the excess pie dough.

8. Fold/press the edges of the pie dough.

9. Place parchment paper in the center and fill with rice so that it keeps the crust flattened.

10. Place the pie dough into the oven and prebake for about 10-12 minutes. Color should be a very light brown.

11. Mix all ingredients for the filling together in a large mixing bowl.

12. Fill both pie crusts with the mixture and place them into the oven. Reduce the oven temperature to 325 degrees Fahrenheit.

13. Bake the pies for about 45 min to an hour.

14. Cool before cutting and serving.
