Salt, 2 tbsp
Black pepper, 1 tbsp
Chili powder, 1/4 tsp
Basil leaves, dried, 1/2 tsp
Rosemary, dried, 1/2 tsp
Olive oil, 3 oz
Method of Prepation:
Gather ingredients and equipment needed.
Season beef with 1tbsp salt, 3/4 tbs black pepper, chili powder, basil leaves, 3 sprigs of thyme, browning and mix until all ingredients are well incorporated.
Set marinade aside for 20 minutes or overnight.
Heat 1 1/2 oz oil in a large saute pan over medium to high heat.
Add beef into the pan, browning meat on all sides.
Transfer the meat to a slow cooker/crockpot that is set to 250 degrees F.
Add remainder of olive oil to the pan.
Add the carrots and saute for two minutes.
Add the onions, celery and garlic and saute until lightly caramelized.
Coat the vegetables with tomato paste and mix until fully incorporated. Add crushed tomatoes and stir.
Pour in the beef broth, stir well and allow sauce to come to a boil then bring the sauce down to a simmer.
Transfer the sauce to slow cooker and allow it to stew for 2 hours or more if needed.
When beef is fork tender, singer (dust with light flour) and whisk well to thicken sauce.
Serve hot over rice or mashed potatoes for a comforting dish.
